My Mango Lavander Cupcake

   Care for some jam?  Or how about sprucing up a ho-hum vanilla cupcake or morning muffin?  I hope you do excuse me for playing around my old humdrum recipe.   Everyone loves vanilla cupcakes, but if you are always having it, or if you do bake it yourself you tend to get bored, well  that's just who I am.   Every time I think of some  modifications on a certain recipe I shun the thought of what if it goes wrong or what if we won't like, the ingredients might gone to waste.   Luckily none of that happened yet, modesty aside, each time I try something out, everyone at home are elated, and kids would say, "there she goes again," and adds, "Can't wait for the yum."   It's a matter of listening to your instincts and of course years of training and tasting.   I guess my family just love me that much, they dare not criticize my cooking, or baking for that matter.   

   This time yours is the last say, if you would try this recipe out though.
   There is this small jar of jam at our cupboard, it has been sitting there for a couple of months already, I've been actually saving this for the right timing (hmm, asking my self now, what timing would that be  : D).  Midge of Sybaritic Diversion actually posted a chocolate cake recipe with jam mixed on it.   I promised myself to try the recipe, but never did.   I hope somehow this would justify the cause.  Thanks Midge by the way!
   How can one resist savoring this luxurious jam.   If you would inspect my cupcake picture way up at the top of the post, you will see bits of mangoes and pink dots (these are the lavander petals).  Those came from the jams.   
   I came to know Pierre Marmonier, at a fair at the NBC Tent at BGC.   He is the French genius behind this product.  According to him, all the jams and chutneys are preservatives-free, local and imported ingredients comprise each jam.   A plethora of real fruit flavors adorned the table where I first found them, even spiced up with chocolates, spices, and herbs.  I would definitely try each of them if again given a chance of visiting any of their sale stations.  
   For now let me share with you my first choice amongst the collection - Mango Lavander.
One of my favorite fruit, mango, is very ideal and hard to deal with in baking and cooking.   However, when I used this for my  cupcake recipe, it was a no fuzz, easy thing to do.   You don't need to grind or mash up a mango to add as a flavor to your batter.   I'd always use a fruit essence from McCormick to vary the flavor of my cakes and of course add food colors to give it a more real and dramatic look.  But not with this one.
So here are the things I used:
1/2 cup (113 grams) unsalted butter, room temperature

2/3 cup (130 grams) granulated white sugar

3 large eggs

1 teaspoon pure vanilla extract
1 3/4 cups  all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup (60 ml) milk
120 g The Fruit Garden's Mango Lavander Jam

The procedure:
1.   Preheat oven to 350 degrees F (177 degrees C) and line 12 muffin cups with paper liners.
2.  In the bowl of your electric mixer, or with a hand mixer, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract.
3.  In a separate bowl whisk together the flour, baking powder, and salt.

4.  With the mixer on low speed, alternately add the flour mixture and milk, in three additions, beginning and ending with the flour. Scrape down the sides of the bowl as needed.
5.  Finally add the jam.  And mix with a spatula.
6. Evenly fill the muffin cups with the batter and bake for about 17 -20 minutesor just until set and a toothpick inserted into a cupcake comes out clean. 
(Do not over bake or the cupcakes will be dry.)
7.  Remove from oven and place on a wire rack to cool. 
8.  Once the cupcakes have completely cooled, you may put more jams at the top. 


   In a giff,I was able to feast with these soft and mangoeey flavored cupcake, what more infused with my favorite herb, the  lavander, paired it of course with a cup of coffee and a cup of green   tea with mint on another occasion.   I would say my experiment was a success after all.  The first time I posted a certain product on my blog, which btw I opted to instead of having it on my recipe blog (www.joyshumblekitchen.com). Didn't mess up the recipe and had two dozens of these lovely Mango Lavander Cupcakes, to enjoy.
