Recipe: Pamora Farm's Spring Chicken In Coconut Milk with Lemongrass

After attending a media event from Pamora Farms and The Peninsula Manila, I took home some Pamora Free Range Chicken products.  I usually just baked the spring chicken in the oven after marinating overnight.  This time, I got a little inventive and playful.

To make sure, we will all enjoy the dish I would cook, I checked some of my recipe books,
i did see some I'd like to cook but when I checked my kitchen, I don't have the ingredients, or thought I could save it for the future days.  So I asked Google.

Birthdays are big deals for us, especially when it is March.  It's the season when we celebrate the whole month with a number of cakes and it had become the busiest month next to December.  We celebrate three birthdays on March, my SIL, my daughter Danielle and mine.

As much as I would want to throw a party, I couldn't, my daughter doesn't like parties, and my husband does not like to spend!  LOL!  I used to cook for my kids but pastas, baked chicken and cakes have been passé.  And since Kdrama is in, so does K-cuisine, Korean food.  .

Saboten, purveyor of the world's favorite pork cutlet has gotten affordable. This is just the perfect news for North-based foodies as they have branched out in MegaFashion Food Hall, in SM Megamall.

When I heard the news, I made it a point to check it out.  As we all have known, Saboten is a world-class brand serving the Tokyo-famed pork Katsu, which have a branch in G/F Serendra, Bonifacio Global City and G/F Glorietta 5.

This time they have opened in favor or SM Megamall goers and made the brand more affordalicious!

Hence, the poem.  It's not mine though, but I deeply felt the mother's ache seeing his son growing so fast, that even in her hardship, of mothering him, she still chooses to be in that situation.

I have had long years of trying this and that, and replacing this with that, and adding this and that, just to make a dish complete with the nutrients your kids need.  Or just like what you might be thinking of me, right now, I'm healthy-food junkie (or crazy).  Call me anything, but don't call me a bad mom.  I know, I know, my kids are just hating me every time I try out something, like adding malunggay to my cookies or brownies or using a different kind of flour.
