Recipe: Grilled Calamansi Thyme Chicken

It's that time of the year when you need to plan your menu for the holidays, but more than that, I'm pretty sure you're still having crunches on your daily meals. Amongst them are not having enough ingredients, probably because of lack of time to go to the market or grocery stores, and how about the baffling experiences you've been having every time you pick up a recipe book.

So, here's one suggestion you could add your recipe list, which is very easy to do and can be prepared in the nick of time.

Also, no need for frying, you can grill the chicken using stainless steel smoker

Ingredients:

2 tablespoons calamansi juice
1/4 teaspoon dried thyme
1 clove garlic, minced
1/4 cup olive oil
1/4 teaspoon salt
1/4 teaspoon fresh-ground black pepper
4 bone-in chicken breasts (about 2 1/4 pounds in all)

Procedure:

Light the grill. In a shallow dish, combine the lemon juice with the thyme, garlic, oil, salt, and black pepper. Coat the chicken with the mixture.

Grill the chicken breasts over moderately high heat or broil them for 8 to 10 minutes. Turn and cook until the chicken is just done, about 10 minutes longer.
