Gastronomy By Joy Turns 1


To my Dear Readers and Followers,

I praise and thank the Lord Jesus Almighty above all!
This has been a one heck of an adventure for a less ordinary foodie-mom like me.   It took me a lifetime to consider this path, inconveniences which are adventures wrongly considered.   Not too many would give a damn on writing about their dining experiences and simple joy's in life and somehow spark some changes to many.   But this inconveniences, aptly considered, changed the way I see life now.
I am more thankful, more open in accepting opportunities and full of zest in my future endeavour.
I first blogged about my dining experience last October 29 of 2010.    An out-of-the-box experience for me, where my husband and I went all the way to Cavite to try out the only restaurant along Daang-Hari.    To my astonishment, the German owner of the restaurant commented on my post, saying that he was happy that we had a nice experience at their Italian restaurant.
Fifteen days from now will be the first anniversary of this blog, and I am aflame right now.    I have actually thought of some plans on how I could share that day with you!

So here's how:
I will be inviting three of my favorite top blogger friends who always reads and comments on my posts.   I have actually chosen Pages Deli, to host our little get-together and would like to have it on Oct. 29, that's a Saturday!   It's my treat or the tricks on me.   Aside from the sumptuous meal at a very dreamy place, we will also be having raffle offs of GC's and imported ingredients, and who would not like my cupcakes and chocolate treats!  A box of that will also be given away, My Pink Wasabi's Kashi Makis and more!

During the event, Museum Cafe provided us with these grubs made more exceptional  with cups of one of my favorite NDG variant, Chococino, a rich velvety hot chocolate made with the finest cocoa beans with a delicate layer of whole milk.


Caffe Lungo, full bodied coffee with a nice crema layer, which gives  out a fruity and roasty aroma.   Coffee 101, lungo is an italian word for long, so it is defined to be "stretched espresso."












Cappuccino,  shot of rich espresso topped with deliciously frothy sweet milk.  The capsules which carry the milk and the ground coffee, is perfect concoction already.  you don't need to add sugar, for it is carefully sweetened.   What so versatile with this style is that you can vary the strength of the coffee or the milk in the manner of setting the lever for making your cappuccino.




Mocha, merges the smooth dark taste of coffee with the rich flavor of chocolate.

Go Greek!


A matter of taste for Greeks, no more plate smashing here, lol!
In its earliest form, plate smashing may be a survival of the ancient custom of ritually "killing" the ceramic vessels used for feasts commemorating the dead. The voluntary breaking of plates, which is a type of controlled loss, may also have helped participants in dealing with the deaths of their loved ones, a loss which they could not control. 
 After some shopping at Glorietta last Thursday we were quite oblivious where to go to have an appetizing one and guess what the whole place is almost done and we were able to use the cross-bridge from SM to Glorietta.    Of course there are only two shops my kiddos do consider, KFC and Jollibee.   But our Ate Danielle wants pizza.   I initially thought of going to Piadina but thought that my kids might not like their food and their way too expensive for a meryenda.
So for times like this that we have hard times considering what and where to eat, we go to Food Choices which is at the Level 3 of Glorietta 4.
 But then I still couldn't decide what to munch.   Then I reached the other end of Level 3 and I chanced upon Go Greek!   For me I found it to be most chic and attracting.   Considering it to be a new rendition to Food Choices.   I've been dreaming for months already of going to Cyma or at Manos Greek Taverna at Tagaytay, after a snack that was not that  good at Cafe Mediterranean.  So my longing for a taste of the Greek, caved in  with a platter full of crisp veggies, slices of pita breads, and chomp chops of roasted lambs.   My eyes were at first at Chicken Gyros but then I told myself, why not indulge with a platter shared with Bhogs for a top-notch heavy on the tummy late snack.

 So, also as I always buy whenever I go to food courts I have to eat Takoyaki. as I'm still on my search for the best franchise.   This ones also from Glorietta's Food Choices.

Regional Flavors of Spain at Tapella


Take time to explore the alchemy of Spain as Gaudi and Tapella brings Flavours de Espana, a month-long food festival featuring Spain’s most famous regional cuisines.

Spanish and Filipinos same passion for good eats are a huge part of its exciting culture—great meals over good conversation remain both preference for feasts. For this type of epicurean experience, Gaudi and Tapella offers a set menu from Spain’s different regions only P599++ per head.



From today until October 31, both restaurants highlight the northwest and south of Spain, Andalucia and Basque. Evidently, the common staple for both regions are meat and seafood but the difference lies in their unique preparation.

Chistorra
For a rich experience of Basque, start off with chistorra (basque chorizo on baguette slice) and viruta (Serrano ham with alioli on baguette slice).  




A Basque cuisine is certifiably known for tomatoes and sweet or hot red peppers, the purrusalda (Basque potato and leek soup) is a tasty combo pair, followed by the freshest assorted greens--ensalada de la casa (tossed greens drizzed with house dressing). 


And for the much-awaited main course, it’s an amazingly tender and generous serving of estofado de cordero (lambstew with potatoes),not a fan of lamb? Then have abonito con tomate (fresh tuna in tomato and pepper sauce) a diet-friendly option of refreshing tuna drizzled with tomato and peppercorns. 


To cap off the meal, it’s a decadent serving of arroz con leche (creamy rice pudding with cinnamon) velvety and thick, this will surely leave the palate asking for another plate.


Andalucia of the South is something not to be missed too. The historic Islamic influence in its cuisine gives this region a unique culinary identity with the use of olive oil, garlic, and wine as the most important native ingredients. 



For a truly appetite-inducing starter, croquetas variadas dos salsa (mushroom, salami, and ham croquetas with romesco and alioli dip) is a favorite delicacy brimming with rich palatable dip. The soup, is an interesting take on tomatoes— gazpacho (fresh tomato and vegetable soup) served cold but delightfully heartwarming. The salad is truly Mediterranean in taste as it is filled with healthy greens and other freshest produced.

 

For the main highlight, paella marisco (fish and seafood paella) is tummy-filling and never boring with its appetizing blend of shapes and colors. 



Another Mediterranean main course option is the pollo moruno (Moorish chicken with   couscous) especially marinated that gives a zestful zing to its flavor.  


End it light and sweet with tocino del cielo, deemed as the heavenly egg custard of Spain. 

Moving on from October 3 to 31, Gaudi and Tapella guide guests to Catalan, rightfully known as the Mediterranean flavor of the northeast.


  As the cuisine of this region is infused with olives, garlic, onions, tomatoes, nuts, and dried fruits, the meal from start to finish offers a delightfully refreshing sensation of flavors. 




The crujentes de jamon (Serrano ham and cheese bites and in phyllo pastry) and ondarza (fried camembert with rapberry sauce) is great choice for a truly-Catalan starters. For a simple yet flavorful soup, sopa de cebolla (onion soup) remains a classic warm up with a certified twist of Span. Feast on ensalada de la casa (Tossed greens drizzled with house dressing) 
followed by parillada de carnes con patatas pobre y pimientos (assorted grilled meats with stewed potatoes and pimientos)  a mix of sweet and savoury ingredients, and a mark of the inventiveness of Catalan cuisine. 


Or opt for the fideua (seafood noodle paella), brimming with the delicious goodness of seafood, but using unique short pasta called fideua. 


 Chef’s recommendation for dessert is no other than profiteroles con leche (cream puff with vanilla ice cream drizzled with chocolate). These lovely puffs are complete with worth-relishing dessert indulgence— airy, light, and cloyingly sweet.


Perhaps one of the most famous fares of Spain, worth waiting is the Flavours of Castillan from October 10 to 31. Food here usually gets a high regard for its diversity and sophisticated preparation especially on its stews, asados, and large assortments of desserts. 


Chorizo al vino (chorizo stewed in red wine) prepares the palate with truly worth-relishing meals to come, with its tasty balance of spices drenched in olive oil, paired with tortilla de pimientos (traditional Spanish omelet with peppers). 

Soup is simple but delicate in flavor, sopa de ajo (poor man’s garlic and bread soup) followed by the aromatic pollo al ajillo (chicken in garlic and olive oil) or gambas al ajillo (shrimps sautéed in olive oil, garlic and chili). 


To conclude the hearty meal, it’s the well-known family dessert recipe, flan dela abuela (grandma’s Spanish leche flan).

Make lunch or dinner a family affair at Gaudi and Tapella, where the experience will take anyone to Spain’s most note-worthy regions. After all, it’s the company that truly completes the treat for a family of discerning foodies.

The beautiful  Spanish lady who's behind all this gorgeous forage is Chef Alexandra Cacho.   Both she and husband Francisco Cacho Jr.  owns and manages Tapella and Gaudi.
Aside from her love for Spanish cuisine, her passion is also  serving us with her authentic Spanish specialties and serving indigenous people through missions.    If ever you do bump at her at the Airport,  you might want to give her a hand with her luggages,   It's sure going to be loaded with all the goods, bottled spices and delectables all from Spain.     So you'll always have the rich flavours of the different Spanish regions and more here at Tapella.

Quan Delicacies by Pueblo


At the 26th Negros Trade Fair, I got really surprised knowing that Pueblo had a spot there.   Pueblo  is the place in  Dian,  Makati,  where we get our "Puto" for every church activities where we have lunch or snacks after.   It is where I had  found my "Puto,"  the only  puto made from rice that I liked.  There are several shops claiming theirs is the best, but i still preferred the ones from Pueblo.   Since then it as the only puto my kids had tried.    My daughter, Danielle  was only 3 years old then,  now  she's 13, though I thought Pueblo might not be there anymore where we would buy our puto and  homemade jams, since we moved to Cavite to settle for 3 and a half years, now we've been back in Manila for more than 3 years already and then Pueblo came to mind.

Puto or known as steamed rice muffin in an online English Dictionary, has two types actually.  The other one is made with rice flour (can also be ground rice) or and the one with regular cake or all-purpose flour.  Hhmm,  there is a big difference in the texture of both cakes, the first one is more grainy but tastier and flavorful and very versatile when essences or toppings are added.   On the other hand, when flour is used the cake may seem fluffier and softer, though some may find it a boring, just like any bread or commercial simple or muffins.

To date, I ever have tried making it, though I cook and bake a lot.  I never even tempted to study any recipe of it.


Going back to that Saturday treat at the 26th Negros fair, I was introduced to Mr. Zeno Martinez,  he then boasted off whilst asking if I have tried Puto Pao.   I said to myself, DUH!?, the famous Puto Pao of the South (means Laguna) is not an unfamiliar thing for me.   When I had a first taste of it when I was in college, when a course mate offered me to buy some to help out her Tita, I then searched Manila where I can have my fill when I desire for it.   Thank God for   SM Hypermart's  Weekend  Market Treats and for Market!  Market's!  Regional  Market Spot.

Till Zeno uttered the "Do you know that!" catch phrase of the moment.    "Do you know that the original Puto Pao came from Negros, No, not from Laguna,"  as his convincing words.   As he was leading me to the area where Pueblo was situated.   All I said was, "REALLY?!" or was it "REALLY NOW?!"    And he introduced me to Agnes Cuenca, the owner of Quan Delicacies and Pueblo.  She told me that it was when bakers at that time, 80's era, had trouble looking for sufficient flours for their baking needs.   Siopao was very  salable and many Negrenses find delight in it, so she thought of using rice flour instead of the usual all-purpose flour and it turned out to be this delectable Puto-pao.   I love how the pork filling was cooked.   The meat was soft with the sauce that's clinging to the meat without getting runny on the whole bun.   See how compact the whole puto and filling is?   It's like having the goodness of both the all-time faves,  Chinese style and the Holy Grail of all native delicacies, Puto.   I have yet to check out Pueblo in Makati if they have this there.


This is their Guava Jam.  This thick amalgam of citrus and sugar, brings back seasons of  playful childhood rummaging in the kitchen after hours of afternoon playing out at the streets.   Now I'm dreaming of bukayo, cocojam, home-made pineapple jam and "meryenda" (snack) hot bun, with an iced  pitcher of  Cool Aide.   Ahhh, where have those days gone?


 
One can also munch on classic cakes and pastries while choosing from an array of homespun foods that can fill your tounge alongside your tummy.


This is also a unique find.  We are all fond of  Pastillas de Leche, okay, this is not the one we would always have for "pasalubong" when coming from provinces such as Nueva Ecija, Pampanga or Laguna even, yes,  the rolled sugary based, condensed and powdered milk candy that every Grade six both from public and private schools have to make as a project.

Quan has their own version of it.   It is a tart, 1 x 1 sq in. in dimension, a milk based confection on the middle with soft and powdery shell that is not at all too sweet.   I think it may also some sort of ground nuts on it.  But one thing's for sure, a box of it may not be enough for one-sittig consumption.


And now, here is a jewel!  Have you ever sampled specialty vinegars?  At home I have bottles of Italian red wine vinegar for vinaigrette.   Going to Tagaytay, we would always chance upon bottles white vinegars along the highway, they are made from young coconut saps.  So, there is white, red, brown vinegars, how about black vinegar?  May sound really interesting but wait till you get a taste.   It's tremendous acidity goes through your nostrils and mildly causes sourness on your taste palate and line your esophagus like a mild wine.   So why black?   They've added Negros' very own black berries.  Yes our country has it.   That I got to check also for myself when I get to visit my uncle's hacienda in the mountains of Dumaguete.


The cute bottles add intricacy to the details of marketing that gourmet vinegar.   It may come in regular Black Vinegar or in Black Chilli.

Before I forget, the top picture is a box full of  Quanolitas.   It more like an energy bar that's more healthy with rolled oats, dates and nuts.   I actually bought some for my diabetic daughter, for I've heard that dried dates are very good for that condition.   This is for those times where she would suffer hypoglycemia, and this is also good for other digestive problems.   One bar gives enough energy for an in-between snack that's light but energy packed.
