#QuakerStrongRecipes: Chef Miko Aspiras Quaker Oats Cream Pie


Corona Virus is real, it's too real to me as I'm nearly drowned with sorrow.  You see I never realized it could really affect everyone until it had hit us.  My parents in Milan, Italy got the virus and so does my siblings and their families, including the kids.  Sadly, my mom got deeply impacted as she already had been suffering from acute kidney disease and having her dialysis at their home, even though they are careful, they still got the dreaded virus and my mom perished in the hospital. 

More than ever, we have to take Covid 19 seriously, and so does other viruses.  We never knew when or how it may hit us, but if our immunity is strong enough we will survive.  

I'm thankful I have several munchies and supplements at home that does the job so well of keeping my family protected. One of that is Quaker Oatmeal.  I've had it all my life and I didn't really realize that it too can be very helpful in boosting our immunity, warding off virus threats.  I thought it's just a good way of keeping our guts and hearts healthy as it is rich in soluble fiber beta-glucan. which reduces cholesterol and blood sugar levels, promotes healthy gut bacteria and increases feelings of fullness.

I'm happy to be joining the bandwagon of foodies trying out Quaker Oats Cream Pie. Preparing it was a lot easier with the Quaker Cream Pie kit which you can order at the link below.

Together with my daughter, we whipped up the cookie dough first. In the kit, all the powdered ingredients (except the powdered sugar) are held up in the jar.  If you are going to try this, make sure to follow the recipe strictly.  We removed the sugars which were at the top of the jar and mixed it with the butter.  The butter and egg is not included in the kit, btw, so prepare that ahead.  From here on, my daughter took over and finished the whole mixing and I helped making the batter into balls.  It would be a lot easier to use an ice cream scooper, the one that has a mechanism, so that the balls are uniform.  We just used a spoon and shaped it into balls, and when baked will just melt into a perfect semi flat disc.

The cream pie is actually a cookie sandwich, and you will need to make a cream filling, and the ingredients are included as well.  You can just use a whisk or a spatula to mix the ingredients called for and spread it onto the cookie disc on the flat side and make a sandwich out of it.

Can I say, this is one easy and fun activity to do with your kids too!  Me and my daughter had a great time making this as we both love to bake.  The recipe card that goes with it was easy to follow, kudos to Chef Miko Aspiras on that.

So aside from being an easy dessert or snack to make, it is also yummy.  You may want to swap the sugar with other sweeteners though, I did found it to be too sweet, so if you're like me that don't want too sweet of a snack, you may lessen the sugar.
