Instant Pot Baby Back Pork Barbeque


I found a new love affair.  The kinda affair that my husband would approve. HaHaHa.

At first I thought I was going to curse myself for falling into this allowing myself be awed and astounded. To be honest, I was afraid to try it but I gave in. And even though many told me that it's gonna cost me, I didn't listen to them.

So, YES, I wasn't sorry that I tried it and I can't wait for our next engagement.

Okay, Okay, I'm not into some sort of adulterous affair, I'm writing about how I feel with the first time I used my Instant Pot DUO60 6 Qt.

I've had it for a long time, but I was sure scared I might not be able to understand how to use it, coz well, it's nifty high-tech.  It's not like your typical rice cooker with just one button to push.  Instant Pot DUO60 6 Qt is a 7-in-1 Multi-Use Programmable Pressure Cooker, Slow Cooker, Rice Cooker, Steamer, Sauté, Yogurt Maker and Warmer, built in with digital buttons up front for the different cooking features.


Why wouldn't I fall in love with it, can you see how beautifully it sits on my kitchen counter top?

 I've seen the raves over Instant Pot® in the US and many home-cooks would attest to it's usefulness and practicality.  Imagine having a smart pressure cooker, a cooker where you can make porridge, cakes and even yogurt.

For my first dish cooked in my new thyngamajig therefore is something I hardly cook as it would take me two to three hours to slow cook- bbq baby back ribs.

I forgot how to cook the baby back ribs so I googled and found Damn Delicious recipe but have removed some of the ingredients (hush, only because I don't have them in my pantry).

There were several flaws in how I executed the dish, coz - "mom-brain" and the other half of my brain looking after my 1 month old baby. But, it came out tender, full-flavored smokiness and fall-off the bone delish.  I over-cooked the ribs and I had a hard time putting out the ribs as the meat had 
literally fell off the bone. 

But let me tell you, you won't go wrong with Instant Pot.  Why?

You get to cook this in only half an hour as compared to doing the actual barbecuing the ribs which is up to 3 hours. 

Since it's totally sealed, the mixed flavors from the herbs have no where to go to but inside the meat.

Another thing I like about this experience is that I don't need to watch over it, and the Instant Pot would beep (signal you with a sound) from time to time.  I can go back taking care of my baby while it cooks or I can take a breather from mommying.

Recipe: Baby Back Pork Barbeque 


INGREDIENTS:


   2 (2-pound or 1/2 kilo) racks baby back pork
     ribs, trimmed of excess fat, rinsed, and patted dry
  • 1 tablespoon brown sugar
  • 2 teaspoons salt
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoons chili powder (optional)
  • 2 teaspoons ground mustard
  • 1 1/2 teaspoons paprika
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 cup water
  • 1/2 cup soy sauce
  • 1/2 cup apple cider vinegar
  • 2 cups barbecue sauce


Procedure:

  1. In a small bowl, combine brown sugar, salt, onion powder, garlic powder. mustard, paprika, black pepper and cayenne pepper.
  2. Season ribs with brown sugar mixture, rubbing in thoroughly on both sides.

3. Add water, soy sauce and apple cider vinegar to a 6-qt Instant Pot®.  Place ribs upright inside.

4.  Select the stew option, adjust pressure to high, and set time for 20-25 minutes. When finished cooking, quick-release pressure according to manufacturer’s directions

5. Preheat oven to broil. Line a baking sheet with foil. 

6. Place ribs, meat side up, in a single layer onto the prepared baking sheet; brush with barbecue sauce.

7. Place into oven and broil until barbecue sauce is caramelized and browned, about 4-6 minutes.

8. Serve immediately with remaining barbecue sauce.



I can't wait to cook more good food for the family with my Instant Pot.  Now I don't have to sacrifice time over having a meal fit for a king and queen.  We can have all sorts of dishes cooked faster and perfectly/
