The New Allegro: A Fresh Expression of Filipino Cuisine and Amuma

Back in 2015, I could still vividly recall how poignant Maribago Bluewater welcomed and served us during our stay.  A special life event made more worthwhile.  The whole resort was exceptional, and the food was in a class of its own all the Visayan specialties under one roof, together with a lot more international faves, in Allegro Restaurant. I couldn't be happier to share another milestone with them.

Bluewater Maribago Beach Resort is one of Cebu’s leading Filipino-owned resorts, known for its distinctive brand of hospitality rooted in Amuma — the Filipino tradition of genuine care.

You can check our family's well-loved experience at this link.

This time, allow me to share another milestone from them...

At the newly reopened Allegro, Bluewater Maribago's premier dining destination, every meal is guided by Amuma—Bluewater's distinctly Filipino philosophy of heartfelt care and hospitality. Here, authentic flavors, honest cooking, and warm service come together naturally.

Across its thoughtfully curated buffets and à la carte selections, Allegro celebrates the richness of Philippine culinary traditions through seasonal harvests, regional specialties, and recipes that have stood the test of time. Rather than reinventing beloved classics, the kitchen honors their original character while introducing subtle contemporary touches that elevate every dining experience.

Among the highlights are comforting Filipino favorites such as Manok Bisaya Tinola, alongside chef-crafted specialties including Pinalutong na Tadyang Kare-Kare, Garlic Butter Baby Squid, Bagnet Binagoongan, and Shrimp Asado Cuapao. The celebration continues at the dessert station, where guests are invited to rediscover the timeless joy of Filipino sweets—from Cassava Turon, Cabcab with Latik, and freshly baked Pandesal with Ube Jam, to the live dessert station featuring Halo-Halo, the original Filipino dessert that has brought generations together over colorful layers of shaved ice, local delicacies, fruits, beans, leche flan, and homemade ice cream. Every sweet ending is a celebration of Filipino heritage.

Much of the produce, seafood, and ingredients are sourced from local farmers, fishermen, and artisans, celebrating the abundance of Philippine harvests while supporting nearby communities. Guided by skilled craftsmanship and respect for heritage, every dish is prepared to nourish, satisfy, and create meaningful moments around the table.

"For us, Amuma is more than hospitality—it's how we cook," said Chef Gerwin Bailon, Bluewater Maribago's Executive Chef. "It means preparing every meal with respect for our ingredients, our traditions, and the people we welcome to our table."
As Bluewater Maribago celebrates its 37th anniversary, Allegro invites guests to rediscover Filipino cuisine in a refreshed setting where every meal tells a story of place, every flavor celebrates local heritage, and every sweet ending reminds guests why Filipino food is meant to be shared. At Allegro, Amuma is served in every dish.
