Peanut Butter, Muesli and Fruit Parfait


Have you ever had those mornings, tired of the usual omelet, bread and peanut butter and boring fruits on the go.  Of course you do!  No one is excused from not having boring breakfasts worst is grabbing whatever you have on the kitchen for that quick run for work or for school.

Breakfast is a big deal in our family, specially if you have energetic kids going to school and a child that needs special care in her food intake.  Well, as you all know, we have a 12 year old "juvie" diabetic.

As much as I would want to make my own muesli from varied oats we have in the pantry, I never had that opportunity, which I'm still planning to do in the coming days, I HOPE! (Sigh)


For the mean time, let me share you a product that's available in the market, no more making it your self, plus reaping enormous benefits- like helping improve cognitive function, boosting your heart health, decreasing your risk for heart disease, and even boosting energy levels.

Muesli (pronounced as 'Mews-li') is rich in fiber and protein breakfast and brunch meal option made from raw, rolled oats and other varied breakfast ingredients.


What began as a dry cereal made from toasted whole oats, nuts, fruit, and wheat flakes, muesli has evolved to become a hodgepodge of a breakfast option with tons of combinations that can be soaked and essentially marinated overnight. Think grains, fresh or dried fruits, seeds, and nuts. The concoction, which is full of vitamins, iron, and magnesium, can also be mixed together with milk (soy, almond, or cow), or yogurt or fruit juice, and left in the fridge overnight.

Caribbean crispy crunchy clusters has dehydrated ripe papaya, sweet pineapples, bananas, cashew nuts, sun-dried raisins, whole rolled oats, corn flakes, crisped rice, and lightly sweetened with sugar and honey.  Yes, let me say it again, it's lightly sweetened, meaning it's not cloyingly sweet and will definitely give you the right amount of energy you'll be needing for the day.

So, one early morning, I woke up and just decided to fix myself (taste-test first before I have my kids try it) a glass of Muesli Parfait, but it's not just your typical parfait, I'm taking it to the next level by being adventurous mixing peanut butter and yogurt.

Recipe below...

Peanut Butter, Muesli and Fruit Parfait
Serves: 1

Ingredients:

6 tbsps blueberries (ca be other berries, in my case I used dried cherries)

2 tbsps peanut butter

4 tbsps plain yogurt

1 sliced banana

1/2 cup Simply Cereal Apple & Cranberry Muesli


Directions:

1. Whisk together the peanut butter and yogurt.

2. In an individual serving bowl or water goblet, layer half of the bananas.  Top with 3 Tbsps of blueberries.   Top with half the yogurt mixture and sprinkle with 3 tbsps of muesli.  Repeat to make 2 layers.

3. Keep it chilled until serving time.

Isn't that easy and fun?  Surprisingly, it's delish!  Will surely make more for my family.
