Scamorza Menu and Mother's Day Promo at Old Swiss Inn


The most appealing thing to me about food is combining and layering flavors, tastes, and textures.  And eating with cheese is the best element to that.

So, when I knew about Old Swiss Inn serving Raclette and now Scamorza, I told my cheese-lover self that I needed to drop by any soonest date.  It was just befitting when the Fat Girls Day Out invited me to join them for the launch of Old Swiss Inn's new menu which apparently is also a partnership with Pinkie's Farm.



If you're not familiar with Scamorza cheese, think of mozarella. 

I've been so inlove with this Italian cheese since our last vacation in Milan.  It is a close relative of mozzarella, a semisoft cheese typical of southern Italy that's made from the same cow's milk base but whose curds are broken up more finely for a drier, lower-moisture cheese. It's also much firmer, and that knoblike handle on top is what makes it more funky and cute. That's how it dangles from a rope for up to two weeks out of water in the walk-in fridge, a light aging process that allows it to develop an edible rind.

Here in the Philippines, Pinkie's Farm makes them at their farm in Lipa from pasteurized grass-fed milk from cows.  I love how they made it with a tawny wisp of smoke that adds a layer of smokey sweetness which was done by smoking it in apple wood.

I was able to take a peek into their newly-designed scamorza cheese menu.


I'm sure you'll get to enjoy the Scamorza Skillet (P 380).  This is where layering of flavors come to play.  Imagine, melted scamorza, with bacon nd cherry tomatoes with hints of rustic herb seasoning.  you'll never go wrong with this, as you get all those goodness swiping the pan clean with the tortilla.


 But if you just want to savor the pure goodness of scamorza, bet on Smoked Scamorza Fondue 
(P 1,100).  It's a winner!  It is served with breads and apples.


Another trully appetizing and such a heavy dish to go with is the Grilled Scamorza Sandwich with Corned Beef.  Since I am also into sandwiches, I also loved this.  With the Old Swiss Inn's famous easy on the bite corned beef makes a whole different expereince in having cheese toasts.


Another all-time fave here is the Gnagi, cured pork knuckles, boiled an baked to crisp, served with sauerkraut and boiled potatoes.


Make sure to end your cheese indulgence with their new dessert offering - Toblerone Double Dark Skillet cookie with Vanilla Ice Cream.

I find it impossible to resist a mild yet flavorful snack simply cut into chunks. Scamorza  proved be a winner as an ingredient in cooked dishes too.  

Since another celebration is in order ...Mother's Day, hellooo!
