Gastronomy by Joy's Take on California Sushi Bites


Did you know that cucumber is a fruit, and not a vegetable?  I bet you didn't know that huh?  I bet you didn't also know that it has superb health and beauty benefits aside from being a good remedy for under eye puffiness.


Cucumbers are mainly composed of 96 % water, so if you're not keen on drinking water, better pop some slices in your mouth, as it easily hydrates the body.  I've read once that it flushes out toxins and bad cholesterol from the body and even helps the kidneys by removing stones from them (that is if you have them).  It's full of A B and C, which boost immunity, give you energy and keep you radiant.

These are just some of the good benefits of eating enough cucumbers, so, why not  make it a habit by adding it to your daily salad or even soup, or why not snack on it, I think it would also be a great addition to your party.  So, allow me to share this great recipe I found which made me love having cucumbers some more.

I have adapted this dish from Delish.com and made it my own by omitting out some ingredients.  The recipe calls for one avocado, you may or may not add it, in this case, since I don't have it in the kitchen, I didn't add it to the recipe.  However, it will give a thicker and and creamier consistency if you do.


California Sushi Bites

INGREDIENTS:

juice of 1 lemon
1 large cucumber, sliced into 1/4" coins
8 oz. lump crab meat (chopped)
1/2 c. mayonnaise
2 tsp. sriracha
1 tsp. fresh sprigs of dill (and more for garnishing)

half slice of 1 meduim-sized avocado

Soy sauce for serving (optional)





Procedure:

1. Thinly slice avocado then toss slices in lemon juice.

2. In a medium bowl, combine crab meat, mayonnaise, Sriracha, and dill. Season with salt and pepper, and squeeze more lemon juice into the mixture, if desired.

3. Top each cucumber sliced with a small scoop of the crab mixture. Sprinkle sesame seeds over each serving or just some dill.  Serve with soy sauce (optional).

***Other options, if you don't want to use crab meat, you may use canned tuna or chopped cooked chicken meat.  You may also add grated Parmesan cheese.
